Ingredients

  • 19 oz can of white kidney beans
  • 19 oz can of red kidney beans
  • 19 oz can of black beans
  • 0.5 # smoked bacon (recipe called for 1#; I used maple bacon)
  • 1 large onion, diced
  • 1 T chili powder
  • 1 tsp cumin
  • 2 tsp canned chipotles in adobo sauce, finely chopped (found with Mexican foods)
  • 3/4 cup dark brown sugar (recipe called for 1.25 c)
  • 3 T molasses (I omitted)
  • 1 bottle Guinness Beer (or any dark beer)
  • Salt and Freshly Ground Pepper

Preparation

Step 1

1. Drain and rinse beans.
2. Cook bacon. Drain all but 1-2 T of bacon fat (reserve to cook onions). Set bacon aside.
3. Cook onions in bacon fat until soft.
4. Add to onions, the chili powder, cumin and chipotles.
5. Cook a further 5 minutes until flavours are well blended.
