Potato Tomato Gratin

Ingredients

  • 2 large potatoes, cooked and cubed
  • 1 onion, diced
  • 4 tomatoes
  • 4 garlic cloves
  • 2 tbsp. olive oil
  • 1/2 cup Parmesan
  • 1/2 tsp. sugar
  • 1 tbsp. dried basil
  • 1/4 tsp. pepper
  • 1/2 tsp. salt

Preparation

Step 1

In skillet, heat 1 tbsp. oil over medium-high heat. Cook garlic stirring 1 min. Add potato, 1/4 tsp. of salt and pepper. Cook, stirring frequently for 5 mins. or until golden. Turn into casserole. Sprinkle with 1/4 cup Parmesan. Add remaining oil to pan. Cook onion, stirring 2 mins. Add tomatoes, cook stirring frequently 7 mins. until hot & slightly thickened. Remove from heat. Stir in basil, sugar and 1/4 tsp. of salt. Pour over potatoes. Sprinkle with 1/4 cup Parmesan. Bake at 450F for 10 mins. or until heated through and topping is golden.
