Ingredients

  • 2 tblsp Paprika
  • 2 1/2 tsp Salt
  • 2 tsp Lemon pepper
  • 1 tsp garlic powder
  • 6 farm raised catfish fillets
  • 2 lemon wedges
  • 1 tsp Dried basil, crushed
  • 1 tsp Onion powder
  • 1 tsp Dried thyme
  • 1 tsp Ground red pepper
  • 1 cup Unsalted butter or margarine, melted

Preparation

Step 1

1. Heat a large cast iron skillet or heavy aluminum skillet over high
heat for 10 minutes.
2. In a small bowl, stir together paprika, salt,lemon pepper, garlic
powder, ground red pepper, basil, onion powder, and thyme.
3. Dip catfish fillets into melted butter/margarine.
4. Coat both sides of catfish with spice mixture, using about 1 tblsp
spice mixture for each fillet.
5. Place coated fillets on waxed paper.
6. Place 3 fillets at a time in the hot skillet (watch out for smoke)
7. Drizzle each fillet with 1 tblsp of the melted butter or margarine
8. Cook over high heat about 2 minutes per side or until fish flakes.
9. Serve with lemon wedges. Serves about 6.
