  • CAKE:
  • 1/4 cup butter, softened
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 ounces sour cream
  • 2 cups fresh blueberries

  • STREUSEL TOPPING:
  • 1/4 cup flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 3 Tablespoons butter, softened
  • 1/2 cup chopped pecans

Step 1

CAKE:
Preheat oven to 375 degrees. Grease and flour a nine inch springform pan. Stir together flour, baking powder, baking soda and salt and set aside. In large bowl, with mixer at low speed beat butter until smooth. Add sugar and vanilla, beat until creamy. Add egg and beat well. Add flour mixture alternately with sour cream, beginning and ending with flour. Occasionally, scrape down sides of bowl. Fold in blueberries. Put in pan.

STREUSEL:
With fingertips or pastry blender, mix flour, brown sugar, cinnamon, and butter together, then add pecans. Spoon batter into prepared pan. Sprinkle streusel over batter. Bake for 45 minutes or until lightly browned. Cool in pan 10 minutes then remove rim from pan. Serve warm or anytime. Good the next day as well.
