Preparation
Step 1
For the gravy, cook bacon in a large saute pan over medium heat until crisp. Transfer bacon to a paper towel lined plate and drain all but 2 Tbsp. drippings. Whisk flour into drippings until combined, cook for 1 minute. Slowly whisk in milk, maple syrup, and cayenne. Bring gravy to a simmer and cook 2-3 minutes. Add bacon to gravy and season with salt and pepper, keep warm.
Preheat grill to medium high. Brush grill grate with oil.
For the burgers, pulse pork and sausage in a food processor just until combined. Divide meat into 4 portions, shape into 1/2 inch thick patties. Season with salt and pepper and coat with non stick cooking spray. Grill burgers, covered, to well done, 4 minutes per side. Remove burgers from grill, tent with foil and let rest 5 minutes.
Place each burger on a bottom biscuit, top with gravy, crispy crowns, an egg, and top biscuit.
