  • 1/4 cup corn flour or all purpose flour
  • 1/2 tsp ground red pepper
  • 1/4 tsp ground black pepper
  • 1/8 tsp salt
  • 1 pound catfish fillets
  • Cooking oil or shortening for shallow-pan frying
  • Tartar sauce (optional)

Preparation

Step 1

1. In a shallow bowl combine flour, red pepper, black pepper, & salt.
2. Dip fish fillets in flour mixture to coat.
3. In a 12" skillet, heat 1/4 inch cooking oil over medium heat til hot
4. Add fillets to the skillet in a single layer
5. Fry on 1 side about 3 minutes or til golden brown
6. Turn fish and fry 3-4 minutes more golden & fish flakes easily
7. Drain fish on paper towels.
8. Serve tartar sauce.
9. Garnish with lemon wedges.
