Ingredients

  • 1/2 cup Italian salad dressing
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar, packed
  • 1 1/2 lbs boneless, skinless chicken breasts, sliced in thin long strips
  • 8 " bamboo skewers, soaked in water for 10 minutes
  • Peanut Sauce
  • 1/2 cup peanut butter
  • 1/4 cup BBQ sauce
  • 1/3 cup water
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1/2 tsp hot pepper sauce

Step 1

Combine salad dressing, soy sauce and brown sugar in resealable plastic bag. Add chicken pieces. Turn to coat. Marinate in refrigerator for 4 hours.

Preheat grill to high. Thread 3 to 4 slices of chicken, accordion-style, onto each skewer. Cook kabobs for about 3 minutes on each side until desired doneness. Makes 14 kabobs.

Peanut Sauce: Combine all 6 ingredients in small saucepan. Heat on low for 5 minutes, stirring occasionally, until smooth and warm. Do not overheat. Makes 1 1/4 cups sauce. Serve with kabobs.
