Bean Soup with Kale

Ingredients
- 1 cup of red beans (canned or dried and soaked overnight in cold water)
- 1 1/2 lb fresh or frozen kale
- 3 cloves of garlic cut into slivers
- 1 large onion cut in half then into wedges. Should make about 1 cup.
- 2 to 3 bay leaves
- 1/2 lb linguica cut into 2 inch pieces
- 3 1/2 cups diced potatoes
- 1/4 cup parsley, coarsely chopped
- 2 Tbs olive oil
- salt to taste
- 1/2 lb elbow macaroni cooked al dente. tossed in a small amount of olive oil. Set this aside for use later.

Step 1
Heat 3 quarts of water to boiling. While waiting wash greens, remove stems and tear into pieces.
Place about one cup of the red beans and 1/4 cup of the boiling water into a blender and puree. Return the puree and the remaining beans to the boiling water. Add the kale, garlic, onion, bay leaves and linguica. Bring to a boil again then reduce to low heat, cover and cook at a low boil for about 30 minutes.
Now, add diced potties, parsley, oil and salt. Cover and let simmer until soup is hot.
To serve place 1/3 cup of the cooked pasta in a soup bowl and add a large helping of the soup.
