- 3 pounds fresh whole-milk mozzarella curds

Preparation
Step 1
1. Allow the curd to come to room temperature.
2. Fill bowl 2/3 of the way with cool water.
3. Dice curds into 3/4 inch cubes
4. Fill a large pot with 1-1/2 gallons of water and bring to 140 - 150 degrees. Add 1/4 cup kosher salt. Stir.
5. Ladle the 4 cups of hot water over the curds and gently move the curds through the hot water. Add hot water until the temperature reaches 130 degrees. Swirl the curds and they will begin to clump together At this point form a ball and fold under.
6. Place the mozzarella ball into the cool water bath.
