Ingredients
- 1 Tbsp. Olive Oil
- 1/4 cup minced onion
- 1 cup dry converted white rice
- 1 tsp. minced garlic
- 1 cup low sodium chicken broth
- 1 cup whole milk
- 2 cups fresh packed spinach
- 1 cup fresh cilantro, leaves and stems
- 2 Tbsp. lime juice
- 2 scallions, sliced
- 1 serrano chile, chopped
- Salt to taste

Preparation
Step 1
Heat oil in medium saucepan over medium heat. Add onion and cook 2 minutes. Stir in rice and garlic, cook for 1 minute. Stir in broth and milk and bring to a boil. Cover pan and reduce heat to low. Cook rice until tender and liquid is absorbed, about 15-20 minutes.
Puree spinach, cilantro, lime juice, scallions and serrano in a food processor. Stir spinach mixture into rice, season with salt and serve.
