Ingredients

  • 1 1/2 c warm water
  • 2 pkgs yeast
  • 2/3 c sugar
  • 1 1/2 tsp salt
  • 2 eggs
  • 2/3 c oil
  • 1 c mashed, cooked sweet potatoes
  • 7 to 8 c flour

Step 1

In large bowl, dissolve yeast in water. Stir in sugar, salt, oil, eggs and sweet potatoes. Mix in flour, 1 cup at a time, until dough is easy to handle, approximately 7 cups. Flour work area lightly and knead dough until smooth and elastic. Place in greased bowl and cover. Let rise until double, punch down, knead and shape into rolls. Bake at 400 degrees for 12 to 15 minutes. This dough can be kept in refrigerator for 2 to 3 days. Punch down occasionally, if necessary.
