Minestrone Soup

Ingredients
- 2 tbls. olive oil
- 1 medium onion diced
- 2 medium carrots, diced
- 1 celery stalk, diced
- 2 medium zucchini, diced
- 1 garlic cloved, minced
- 3 medium potatoes unpeeled and diced
- 3 cups thinly sliced cabbage
- 1 can cannelini beans, rinsed and drained
- 1 can diced tomatoes undrained
- 2 cans chicken broth
- 1/2 tsp crushed dried rosemary
- 1/2 tsp salt
- 1/2 tsp pepper
- Grated Parmesan cheese

Preparation
Step 1
1. Heat oil in large stockpot over medium heat. Add onion; cook until softened, aabout 6 minutes
2. Add carrots and celery. Cook stirring occsionally, 3 mins. Add remaining ingredients except cheese
3. Cover and bring to a boil; reduce heat and simmer gently 1-2 hours. Serve with cheese.
