Spicy Mexican Chicken Corn Chowder

Ingredients
- 2 tablespoons butter
- 1 tablespoon oil
- 3 boneless skinless chicken breasts, cubed ( can use more or less)
- 1 small onion, chopped
- 1-2 jalapeno peppers, seeded and finely chopped
- 5 large garlic cloves, finely chopped ( do not mince)
- 1 1/2 teaspoons cumin
- 1 cup chicken broth
- 2 cups half-and-half cream ( can use half cream and milk)
- 2 cups shredded Mexican blend cheese ( or 2 cups cheddar cheese)
- 1 (14 ounce) can cream-style corn
- 1 (4 ounce) can diced green chilies
- 1 (14 ounce) can diced tomatoes, drained or 1 large chopped tomatoes
- Seasoning salt, to taste (can use plain salt)
- Freshly ground black pepper, to taste
- Tabasco sauce ( to taste)
- Shredded Mexican blend cheese, for sprinkling on top ( or Cheddar cheese)

Preparation
Step 1
Heat butter and oil in a Dutch oven over medium.
Add in cubed chicken, onion and jalapeno peppers; cook stirring until chicken is no longer pink (adding in the garlic and cumin the last 2-3 minutes of cooking time).
Add in broth; bring to a boil over medium-high heat.
Reduce heat to low then stir in cream, shredded cheese, cream-style corn, green chilies and diced tomatoes; cook stirring until the cheese has melted and all ingredients are heated through (about 2-3 minutes).
Season with salt, pepper and Tabasco to taste. Ladle into bowls then sprinkle with more shredded cheese.

I made this recipe as directed but added more broth because it was a more like a stew. Also added Chipotle pepper sauce. I'm thinking about adding some diced potatoes next time. Truly delicious, well done Kittencal.
I made this for some co-workers with rave reviews. I have made your recipes one by one and I can tell you (just like others have) they are fantastic. It nice to know that even though you don't have to share these recipes you do. You truly are a good person and the world would be a much better place if there were more Kittencals out there.
This was SO good, and did not take long to make! My fiance liked, and commented how you get hit with that heat one after another, will make with less onions next time tho. Definitely a keeper and a must for winter time, thanx kittencal, keep on posting!!
I only used 1/4 can of tomatoes... not a big tomato fan no tabasco, used cayenne instead. next time I'll thicken ( hubby likes thicker soups) flavor was great. easy to make
The whole family loved this. Very rich and filling. I used precooked dark meat chicken and was afraid of the heat so I left out the tobasco sauce. It ended up being too mild. I'll make it again adding more jalepenos and a few seeds! I also added 8 ounces of frozen corn. This is a winter-time keeper.
I love this soup! It is delicious. I used fresh corn, a can of 10 oz. rotel instead of tomatoes and green chile separate, and used a veggie broth and milk and some leftover bbq'd chicken which I chopped up. What a great recipe, highly recommend.
This was absolutely delicious. My husband thought it was the best soup he's had in a long time and my 3 kids enjoyed it too. Only used 1 jalapeno (was a large one), seeded and had 4 chicken breast equal to 1.3 lbs. Also used diced tomatoes with green chilies plus the 4 oz. can of chilies. It ended up having just the right amount of kick for us, so didn't use the Tabasco at all. We gobble it up so not enough for another dinner, but will look forward to the left overs for lunch. I used 2 jalapenos and no added salt from this (if you are using canned tomatoes you might want to taste before salting). This was really yummy. I didn't find it to have too much of a bite, but my hubby was like OMG this is SO spicy so I guess you should just decide on your palate and make it that way. I did simmer longer than called for just to keep it warm unti the side was ready and it did thicken up a bit - but in a good way! As usual KittenCal, you've done it again! This we made spicy...and loved it! I added drained and rinsed black beans, chickpeas, diced tomatoes with jalapenos...Mexican cumin and the juice of chipotle peppers...YUMMO!!! Kids enhaled this one on Mexican Soup night.
Delicious is the key word here! Everyone who tasted this soup loved it, and it was so easy to make. I will be making this again, I am sure, by popular request.

Oh.............My..........GOODNESS. I do believe I'm going straight to prison for my faux pas (I accidentally bought CREAM instead of 1/2 & 1/2), but I don't care! This was outstanding and I know it'll be just as good when I make it properly. The combination of ingredients... how can I say this?... perfect? Yes, PERFECT! I photographed this, but can't find the particular memory card I was using at the time. (I think my use of cream in the soup made me comatose, but I'm not complaining. *L*) Thank you, Carol, you rock!
A huge success on this tastey and flavorful chowder. I've been sampling as I cook and I can't wait to eat a big bowl of it tonight, it will be just what we need on this cold, cold night. Truthfully I was very stingy with the jalapeno peppers and the tabasco sauce, just used about 3 slices of the peppers and it's perfect, for me anyway. I love the flavor of the cumin in this. I mistakenly opened a can of whole kernel corn instead of the cream style, so I added about half of the can in the chowder and froze the rest. Made for January "Belly Warmers, Soups and Stews" and it will be a good belly warmer.
This recipe is very good, just a few minor changes to suit my taste, 1 jalapeno with seeds, next time, seeds coming out, used half/half, tad bit more cumin, used cooked chicken, only sprinkled little cheese on top, and the best thing was crushed up corn chips in bottom of bowl, let it absorb a couple of minutes...this is definately a keeper, the flavor is awesome, thanks kittencal!!
Excellent! I didn't add green chilies, but I did sprinkle some dried red chili into it. Very much enjoyed!
