Ingredients

  • 3 lbs. cucumbers, unpeeled and thinly sliced
  • 1 large onion, sliced
  • 2 medium green peppers, chopped
  • 2 c. cider vinegar
  • 2 c. sugar
  • 1/4 c. pickling salt
  • 1 T. mustard seed
  • 1 T. celery seed

Preparation

Step 1

In a large bowl, combine cucumbers, onion and green peppers.

Combine remaining ingredients in a saucepan; bring to a boil. Reduce heat to low; simmer, uncovered, for 5 minutes. Pour over vegetables and let stand 30 minutes. Stir mixture occasionally. Evenly divide vegetables and juice among freezer containers, allowing one-inch headspace at top of each. Place covers on containers and freeze quickly.

When ready to use, allow one day in refrigerator to thaw.
