These delicious cookies just couldn't be any simpler! They're a no bake combination of oats, butter, evaporated milk and pudding, topped with melted chocolate perfect to make in summer or with little kids.

Ingredients
- 2 cups sugar
- 3/4 cup unsalted butter
- 2/3 cup evaporated milk
- 1 (3-4 oz)pkg instant butterscotch pudding mix
- 1 tsp vanilla extract
- 3 1/2 cups quick oats
- 1 cup mini chocolate chips

Step 1
1. in large saucepan over medium heat, bring sugar, butter and evaporated milk ot boil. Boil, stirring constantly, 2 mins.
2. Remove from heat and stir in pudding mix, vanilla extract and quick oats. Let stand, uncovered, 5 mins. until liquid is absorbed by oats.
3. Drop by slightly heaping tablespoonfuls onto waxed paper, flattening tops slightly with back of spoon.
4. Place chocolate in small, microwave safe bowl adn microwave on high until melted, about 45 seconds, stirring once halfway through cook time. Stir until smooth.
5. Place 1/2 tsp melted chocolate on top of each cookie and spread slightly with back of spoon. Let cookies set 5 mins before removing from waxed paper.
