- 6 carrots, peeled and sliced
- 1 egg
- 1/4 cup flour
- 2 Tablespoon butter
- 1/2 teaspoon baking powder

For the carrot pancakes, cut the carrots into piece and cook them until they become soft. Mash the carrots coarsely with a fork and add the butter. Mix flour and baking powder. With a spoon, add the egg and the flour to the carrots. Don’t hesitate to add a little bit more flour if the mixture seem to be too soft.
With your hands, form pancakes that will be 1/2 inch thick and 1 1/2 inches in diameter. In a hot pan, put two tablespoon of butter. Fry the pancake about 2 minutes on each side or until golden brown.
Serve with a pat of butter and plenty of salt and pepper.
