Ingredients

  • Cake:
  • 2 eggs
  • 2 cups sugar
  • boiled water
  • 1/2 cup baking cocoa
  • 1 stick margarine
  • 1 cup sour cream
  • 2 1/2 cups flour
  • 2 tsp baking soda
  • pinch of salt
  • 1 tsp vanilla
  • Icing:
  • 2 cups sugar
  • 6 tablespoons baking cocoa
  • pinch of salt
  • 1/2 cup shortening
  • 1/4 cup white corn syrup
  • 1/2 cup milk
  • 1 tsp vanilla
  • 1 cup chopped walnuts

Preparation

Step 1

Beat eggs for 2 minutes, add in sugar. In separate bowl, mix cocoa with 1/2 cup boiling water and cut up stick of margarine. Mix until dissolved and add to egg mixture. Add in remaining ingredients and stir until blended. Add 1 cup boiling water and stir until smooth. Pour into greased and floured 9X13" cake pan and bake for 30 minutes in 350 degree oven or until center of cake comes out clean when checked with a toothpick. Cool then frost.

For icing, combine all ingredients except walnuts into a heavy saucepan and bring to a boil. Boil for 2 minutes or to soft ball stage. Remove from heat and stir in walnuts and beat with spoon until it loses it's gloss and starts to look dull. Spread over cool cake. It will harden like fudge over the cake.
