Ingredients

  • SEASONED FLOUR:
  • 1 1/2 - 3 lbs. frying chicken or chicken parts
  • Enough Crisco for deep frying
  • 1 1/2 cups flour
  • 1 tsp. garlic salt
  • 1/4 tsp. poultry seasoning
  • 1 1/2 tsp. pepper
  • 1 1/2 tsp. paprika
  • CRISPY BATTER:
  • 2/3 cup flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 egg yolk beaten
  • 3/4 cup flat beer or water

Preparation

Step 1

Combine ingredients for seasoned flour in a medium size bowl; set aside.

Combine egg yolk and beer or water. Add gradually to dry batter ingredients.

Heat Crisco to 365°F in deep saucepan or deep fryer to a depth of 2 inches. Moisten chicken pieces. Dip in seasoned flour, then batter, then back into seasoned flour. Fry in hot Crisco 15-18 minutes. Drain on paper towels.

Great recipe and technique but it needs more flavor. The triple dip makes an amazing extra crispy coating.

This was a easy recipe, just a little messy. I added more spices then what was stated but other than that it came out nice and crunchy. I used chicken tenders, it cooks up faster and easier to fry.

This recipe is my new base for UNBELIEVABLE fried chicken! I added chicken seasoning & some wing sauce to the wet batter, and deep fried in lard, OMG it was off the hook! Super crispy, just had to cook longer cause I used boneless skinless breasts about 12 min. I have tried other recipes in the past & this is the best by far. Thanks for a WINNER!

This recipe is the best one I have found for anything online. The batter is crispy and tasty. My husband is an extremely picky eater and asks me to make this once or twice a week.

Crisco!!! Really??? Trans fats galore! I use Palm oil shortening or pure un-hydrogented lard...yes lard, from grass fed cows! Read the Liberation Diet. It is all our ancestors ate.

FYI - The current Crisco formulations are trans-fat free. Have been for a few years now.

I just made this last nite.. I'm just learning how to cook so this was my first time ever making fried chicken. This recipe was perfect! It really did taste like KFC's original recipe chicken! This ones a keeper.

Great recipe and technique. I love the triple dipping...my mom and grandma always made fried chicken (southern family), but they never mentioned the dry/wet/dry method! Traditions will be changing.

I am having so much trouble lately keeping my chicken coating crispy. Is it because I am filling the skillet too full or because I am using E.V.O. Will try this one with shortening and see if it makes a difference---Thanks---Sharon
