Ingredients

  • Beef:
  • 3 lb Corned Beef
  • 1/4 cup Balsamic Vinegar
  • 1 cup Water
  • 1/4 cup Brown Sugar
  • 2 tsp Cornstarch
  • Onions:
  • 1/2 lrg White Onion
  • 1/2 large Red Onion
  • 1 Tbsp Olive Oil
  • 1/4 tsp Salt
  • 1 Tbsp Brown Sugar
  • 2 tsp Apple Cider Vinegar

Preparation

Step 1

Preheat oven to 400.
Place corned beef into a 9x13 pan.
Mix balsamic vinegar, water and brown sugar. Pour over corned beef.
Cover, place in middle rack of oven and bake for 3 hours.
Slice the onions into 3/4" slivers.
Toss with oil and slat. Lay on a lined baking sheet.
Place on lower rack of oven and bake for 20 minutes. Stir. Add sugar and vinegar and toss. Place on top rack and bake another 20 minutes. Allow to cool.
When corned beef is ready either shred after 15-20 minutes, or let cool completely and slice.
Combine onions, cornstarch and water, along with pan juices in a saucepan. Cook over medium flame, stirring as it thickens.
