Ingredients

  • 5 bocon strips
  • 3/4 Tbsps. onion, chopped
  • 3 Tbsps. olive oil
  • 1 1/4 cups uncooked long grain rice
  • 1 1/4 (14.5 oz.) cans beef broth
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 2 cloves garlic, chopped
  • 1/4 cup frozen peas
  • 1/4 cup frozen corn
  • 1/4 tsp. chili powder
  • 1 1/4 (14.5 oz.) cans stewed tomatoes

Preparation

Step 1

1. In a large skillet,cook bacon until crisp, remove to paper towles.

Drain reserving 2 Tbsps. drippings.

In the drippings, saute onion until tender.

Remove and set aside

2. In a small skillet, heat oil over medium heat.

Add rice; cook and simmer for 20 minutes.

Stir in the bacon, garlic, onion, peppers, frozen peas, frozen corn, chili powder and tomatoes

Cover and simmer for 25-30 Min. longer or until the rice is tender and
most of the liquid is asborbed
