Ingredients

  • 1 pkg. (8 1/2 oz) corn bread/muffin mix
  • 1 pkg. (9 oz) yellow cake mix
  • 2 eggs
  • 1/2 cup 2% milk
  • 1/3 cup water
  • 2 Tbsp. canola oil
  • 1 can (4 oz) chopped green chilies, drained
  • 1 cup (4 oz) shredded cheddar cheese, divided

Step 1

In a large bowl, combine corn bread and cake mixes. In another bowl, combine the eggs, milk, water and oil. stir into the dry ingredients just until moistened. Add chilies and 3/4 cup cheese.

Fill greased of paper-lined muffin cups 2/3 full. Bake at 350 degrees for 20-22 minutes or until a toothpick comes out clean. Immediately sprinkle with remaining cheese.

cool for 5 minutes before removing from pans to wire racks.

Yield: 16 muffins
