  • 1 lg. cauliflower
  • 1/3 c. veggie oil
  • 1 c. onion, chopped
  • 6 Tbsp. unseasoned bread crumbs
  • 2 eggs.

Step 1

Break cauliflower into pieces and steam until tender. Heat 2 Tbsp. oil in fry pan, add onion and cook over med-low heat until soft golden brown (about 10 minutes).

Drain cauliflower and mash w/fork - so still some small pieces. Add bread crumbs, eggs, onion, salt & pepper to taste, and mix well.

Wipe pan used to fry onion, and heat 1/4 c. oil in the pan. Take 1 heaping Tbsp. cauliflower mix and press to make compact. Flatten it and make cake about 1/2" thick and add to pan. Cook 4-5 cakes t a time. Fry until golden brown, about 3 minutes. Remove with slotted spoon and keep warm in oven until all cakes are cooked.
