Fish Parmigiana for 2 1 Picture

Ingredients

  • 2 frozen breaded flounder or other white-fleshed fish fillets (6 ounces each) OR make your own
  • 2 cups spaghetti sauce
  • 3/4 cup (3 ounces) shredded mozzarella cheese
  • 1 teaspoon dried Italian seasoning

Preparation

Step 1

1. Preheat the oven to 400°F. Coat a baking dish with nonstick cooking spray.

2. Place the fish fillets in the baking dish. Bake according to
package directions. When about done, top with the spaghetti sauce (pre-warmed). Sprinkle with the mozzarella cheese, then the Italian seasoning.

3. Bake, uncovered, for 10 to 12 minutes, or until the fish flakes easily with a fork and cheese is melted.

Cook's Note: Serve with pasta and some rolls that you toss in the oven to bake along with the fish.

MY NOTES: This can be served with mashed potatoes and a vegetable if preferred - in that case, use only one cup of spaghetti sauce...maybe even 3/4 cup.
