Basic Pancakes
By Addie
This is my go-to recipe for pancakes when I want to make everyday basic pancakes. Top them with butter and maple syrup or use your favorite flavored syrup. This recipe is easily doubled for a large family. Make the batter the night before, cover, and refrigerate. What could be easier?

Ingredients
- 2 cups all-purpose flour, stirred or sifted before measuring

- 2 large eggs
- 1 1/2-1 3/4 cups milk

Details
Preparation
Step 1
Sift together flour, baking powder, sugar, and salt. In a separate bowl, whisk together the eggs and 1 1/2 cups of milk; add to flour mixture, stirring only until smooth. Blend in melted butter. If the batter seems too thick to pour, add a little more milk. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake. Cook until bubbly, a little dry around the edges, and lightly browned on the bottom; turn and brown the other side.
These basic pancakes are perfect for a weekend morning or holiday breakfast, along with sausages or bacon and your favorite toppings. Serve these delicious pancakes with plenty of butter and maple syrup, or use your own favorite syrup or fruits on them.

Common sense or Cooking 101 is needed for any recipe!! I reduced the salt, and added milk or water as I saw fit. I also adjusted the amount of salt and baking powder...again, depending on the texture and taste of the batter. I also used more butter because even if buttery pancakes are heart attack inducing they're amazingly good. Nonetheless, it was so ridiculous easy to make and the pancakes were yummy. I made them for my host family in South America and they loved them.
Pancakes were a success! I wanted to make some pancakes for my bff's birthday but since we werent around i made em this morning and it came out great! To be honest, i didnt follow the recipe totally- Only one tsp of baking powder, and at first I added only one cup of milk. Then I made the first batch it came out a li'l thick so I added the rest of the milk and that did it good. Oh and a li'l more sugar makes it taste awesome. My girlfriend really enjoyed it. Now she zonked out on the couch full of pancake and that saved me buyin a birthday gift! (Guys, take a hint!)
These are the best pancakes ever!! I'm Dutch and live in Ecuador, and I never made pancakes before. Since we have so many Americans coming to visit us, it was time to learn it. Every single person loves my pancakes, and they all want the recipe. Thank you for sharing.
Just made these, quite simple to make, and lovely to eat! :) Light and fluffy but substantial. Yum.
Simply Put: Fluffy and DELICIOUS! I have made these pancakes twice, because they are so fluffy and extremely yummy! I made 2 big huge ones, and still had a lot of leftover batter! Kudos to the creater of this wonderful recipe!"
So simple even a novice could make it! I substituted self riding flour for the all purpose flour and did not add the paking powder and used only 1/4 teaspoon of salt. I also added fresh frozen blueberries. The pancakes were super fluffy & HUGE. Much better than a runny box mix or an out of the can mix one can get from the store. I do like a thicker pancake and if one prefers a bit thinner batter, then adding just a touch more milk while you are mixing will help. You don't want the mix too runny or you will end up with crepes instead of a pancake.I will make this again. Perfect Weekend breakfast and super easy to make.
Made these with the kids in the morning before school. Sifted flour before measuring and used only 1 cup of milk though. Pancakes puffed before their eyes and were fluffy goodness, no hockey pucks or rubber here! We loved 'em!
Quite the fluffy pancake! My wife is a big fan of fluffy thick pancakes- and these were winners. I sifted each ingredient and mixed the eggs/milk separate. Only modification was to add more baking powder- about 1 1/4 tablespoon. Texture wasn't 'light' but it was big, thick, and perfect- not rubbery as someone else reported. We'll cook'em again.
These Basic Pancakes are great! They are very easy to make and the recipe calls for just the bare minimum (I could make 'em from what I had already in my cupboard). Alter the milk to taste if you like cake-like or fluffier pancakes. Taste really good.
Light and Fluffy! For all you who came out with "hockey pucks" or claim a "waste of ingredients," you should probably stick with instant oatmeal for breakfast, or maybe even cold cereal. These were great! And, the trick of waiting until the pancake bubbles before turning over is a sure way to come out with the perfect pancake. For the failures, you probably forgot to sift the flour BEFORE measuring. That's why you all thought you needed more milk! Sift before you diss, amateurs.
Just like IHOP! Make sure you get your batter thin enough... That is what the extra milk is for! It should be thin enough to pour easily out of a measuring cup. I used a four cup pyrex. Mix as directed and then if it is a little thick, mine was alot thick, use the extra milk to thin it out. Very good pancakes... I looked up this recipe because I did not have any self rising flour. I will always use bread flour to make pancakes from now on!
