Ingredients

  • Makes 1 quart:
  • 3 cups assorted vegetables, washed and cut into bite-size pieces
  • 1 Tbsp. pickling spice
  • 2 Tbsp. fresh chopped dill (optional)
  • 2 cloves garlic, sliced thin (optional)

Preparation

Step 1

Add brine ingredients to a stainless steel pot and bring to a boil, stirring to dissolve the salt. Reduce heat to a soft boil.

Meanwhile, add pickling spice to the bottom of a sterilized canning jar. Fill 1 qt. jar with vegetables, dill and garlic, leaving about 1/4" head space. Ladle in hot brine.

Process in a hot water bath for 10 minutes
