Ham and Cheese Cannelloni

- 1 c. ricotta cheese
- 1 c. shredded mozzarella
- 1 lg. egg
- 1 (15oz) jar creamy alfredo sauce
- 8 egg roll wrappers
- 8 slices deli ham
- 1/2 c. freshly grated parm cheese

Step 1
Preheat oven to 400. In a med. bowl, combine the ricotta, mozzarella, and egg. Reserve 3/4 c. alfredo sauce and spread remaining sauce in bottom of 9x13 dish.
Arrange an egg-roll wrapper on a work surface. Spread 3 tbsp. of the ricotta mix over the wrapper, cover w/ a slice of ham, then roll up to form a log, jelly-roll style. Repeat w/ remaining wrappers and place the cannelloni, seam-side down, in a single layer in the baking dish.
Spoon reserved alfredo over the cannelloni, top w/ parm cheese, and bake for 20 mins, or till brown and bubbly.
