- 2 t fresh lemon juice
- 1 15 oz. can cannelini beans, rinsed
- 3 large scallions, sliced
- 2 heads radicchio, rinsed, crisped in fridge, and sliced
- 3/4 cup shaved asiago

In large bowl, mix EVOO and lemon juice; add beans and scallions and mix. Add radicchio; toss and season. Add cheese and toss gently; serve.
