Chocolate Sugar Cookies

Ingredients

• 6 Tbsp Oil
• 1/2 cup Margarine
• 1 3/4 cups packed Dark Brown Sugar
• 3/4 cup Cocoa
• 1 1/2 + 2 Tbsp Flour
• 1/2 tsp Baking Soda
• 1/4 tsp Baking Powder
• 1/2 tsp Salt
• 1 Tbsp Vanilla Extract
• 1 Egg + 1 Yolk
• 3/4 cup Mini Chocolate Chips
• 1/2 cup Sugar, for coating

Preparation

Step 1

Preheat oven to 350.
In an electric mixer fitted with the dough hook, cream oil, margarine and brown sugar together until creamy and lighter in color.
In a separate bowl, mix the cocoa, flour, baking soda, baking powder and salt.
Lower the mixer speed and add the dry ingredients followed by the vanilla and eggs.
Once mixed add the chocolate chips and mix by hand to incorporate.
Put sugar in a shallow bowl.
Form dough into 1" balls and roll in the sugar.
Bake for 13 minutes.
