Ingredients

  • 1/4 cup olive oil, plus more for oiling the pan
  • 1 pound hot or sweet Italian sausage links
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 large yellow onion, sliced
  • 3 garlic cloves, chopped
  • 1 tsp. crushed red pepper flakes
  • 3/4 cup chicken stock
  • 1 Tbsp. unsalted butter
  • 2 Tbsp. chopped fresh basil
  • Kosher salt and cracked black pepper
  • 2 Tbsp. freshly grated Parmesan cheese

Step 1

Preheat the oven to 400 degrees F.
Lightly oil a shallow baking pan and roast the sausage for 10 to 15 minutes, until about three quarters cooked. Turn occasionally during roasting to ensure even cooking. Remove the sausage from the oven but do not turn off the oven.
Meanwhile, slice the peppers into strips about 2 inches long and 1 inch wide. In a heavy, ovenproof saute pan, heat the olive oil over medium-high heat. When hot, saute the onion, bell peppers, garlic, and red pepper for 4 to 6 minutes, or until the bell peppers begin to wilt.
Cut the sausage links into 1 1/2- to 2-inch pieces. Add the sausages to the peppers and onion and stir to mix.
Pour the chicken stock into the saute pan and put in the oven. Cook for 5 to 7 minutes or until the sausage is cooked through. Remove from the oven and swirl in the butter until incorporated. Stir in the basil and season to taste with salt and black pepper.
Divide among 4 plates and garnish with cheese.
