Ingredients

  • 4 bone-in pork loin chops (1 inch thick) - I use boneless sirloin pork chops
  • 1-2 tablespoons vegetable oil
  • 1 garlic clove, minced (I use 2)
  • ¼ cup soy sauce
  • ¼ cup red wine or chicken broth (I use the wine)
  • 2 tablespoons brown sugar
  • ¼ teaspoon crushed red pepper flakes (use more if you like, I do)
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water

Preparation

Step 1

In a skillet, brown pork chops on both sides in oil; transfer to a slow cooker. (I cut the chops into smaller portions so they ‘flake’ easier later.) Add garlic to drippings in skillet; sauté for one minute or until golden brown. Stir in soy sauce, wine or broth, brown sugar and red pepper flakes; cook and stir until sugar is dissolved. Pour over chops. Cover and cook on low for 7-8 hours or until meat is tender.

Combine cornstarch and cold water until smooth; gradually stir into slow cooker. Cover and cook for at least 30 minutes on high or until slightly thickened. Serve over rice.
