  • 10 to 15 peppers (Jalapenos, Serrano and one habanero) remove stems but leave whole
  • 1/2 cup white vinegar
  • 1/4 cup fresh lime juice
  • 1/2 cup carrots, grated
  • 1/3 cup onions chopped
  • 2 cloves garlic chopped
  • 1/2 tablespoon salt



Step 1

Place the carrots, onions, garlic and peppers, not the habaneros, in a small saucepan with enough water to cover them. Boil for 5 minutes. Drain and transfer the hot mixture to a blender or food processor, now add the habanero, and puree. Return the fortified mixture to the saucepan. Add vinegar, lime juice and salt. Simmer 10 to 15 minutes. Pour into sterilized bottles and refrigerate.
