Ingredients
- 1 9 in. pie shell
- 5 large tomatoes, peeled, cored, and sliced 1/4-inch thick
- salt and pepper to taste
- 2 Tbsp chopped fresh oregano
- 1 cup chopped green onion
- 2 cups grated cheddar cheese
- 1 cup mayonnaise
- 1/2 cup grated Parmesan cheese

Preparation
Step 1
1. PREBAKE PIE SHELL: Preheat the oven to 400. Bake the crust for 10 minutes. When you remove it from the oven, prick it a few times with a fork and set it aside. Reduce the oven temperature to 325.
2. LAYER THE FILLING ON TOP OF THE CRUST: Place 1/2 of the tomato slices into the pie crust. Season with salt and pepper. Layer half of the oregano and half of the onions on top of the tomatoes. Repeat with another layer of tomatoes seasoned with salt and pepper, oregano and onions. In a medium sized mixing bowl, combine the cheddar cheese and mayonnaise. Spoon this over the tomato mixture. Sprinkle the Parmesan cheese on top.
3. BAKE, COOL, AND SERVE: Bake the pie until the top is a golden brown, about 45 minutes. Set it aside to cool. The pie will continue to set. Serve the pie at room temperature with a large mixed salad and a pitcher of iced tea.
