Ingredients
- 3 lb Butternut Squash, peeled, seeded and coarsely chopped
- 1/2 cup butter
- 1/4 cup light brown sugar
- 2 Tbs maple syrup
- 1/2 tsp white pepper
- 1/2 tsp nutmeg
- Chopped parsley, for garnish

Preparation
Step 1
Preheat the oven to 350 degrees. Butter a 3 quart baking dish.
Place the squash in a deep saucepan. Add salted water to cover. Boil until tender, about 20 minutes. Drain well. While out is still hot, combine the squash with the remaining ingredients (except the parsley) in a mixing bowl. Whip with a beater until smooth. Adjust the seasonings to taste.
Spoon the squash into the prepared boing dish, cover, and bake for 10 to 15 minutes or until piping hot. Sprinkle with parsley and serve.
