Ingredients

  • 2 quarts large quahogs (2 cups meat)
  • 1 medium onion
  • 4 medium potatoes (2 cups cubed)
  • 1 cup water
  • 1/2 teaspoon salt
  • 1/2 teaspoon sage
  • 3 Tablespoons butter
  • 1 cup milk
  • 4-6 common crackers
  • Salt
  • Pepper
  • Paprika

Preparation

Step 1

Open quahogs (remove dark sac), and remove meat. Chop meat coarsely. Combine first 6 ingredients in saucepan and cook until potatoes are just tender. Make roux of flour and 3/4 cup milk. Stir roux into cooked mixture, add butter. Season to taste. Pour into greased baking dish. Soak crackers in 1/4 cup milk until moist. Place crackers on quahog mixture. Dot crackers with butter. Sprinkle paprika over topping. Bake at 400 degrees for 20 minutes.
