Ingredients

  • 3/4 c. kosher salt, plus 1 tsp.
  • 3/4 c. light brown sugar, plus 1 tsp.
  • 3/4 c. white vinegar
  • 3 tbsp. dry bbq seasoning
  • 2 large, bone-in, skin-on chicken breast halves, about 2 1/4 lb.

Preparation

Step 1

Combine 8 c. water, 3/4 c. ea. of salt, brown sugar, vinegar and 1 tbsp. of bbq seasoning in large plastic container to create a brine.

Add chicken to container and refrigerate for 2-4 hrs.

Preheat oven to 350 deg.

Remove chicken from brine and pat dry.

Combine remaining salt, brown sugar and bbq seasoning and rub on chicken.

Place chicken in roasting pan, add 2 tbsp water to bottom of pan and roast for 45-50 min.

Rest pan on cutting board for 5 min. Slice chicken and serve.
