Ingredients

  • 4 large chicken breasts
  • 2 sleeves Ritz crackers
  • 1/4 t salt
  • 1/8 t pepper
  • 1/2 C milk
  • 3 C cheddar cheese, grated
  • 1 t dried parsley

Preparation

Step 1

1. Cut each chicken breast into three chunks.
2. Grind up ritz crackers
3. Pour milk, cheese and crackers into three separate shallow pans. Toss salt and pepper into cracker crumbs and mix well.
4. Press each chicken piece into milk, then cheese. Press cheese onto chicken to make stick. Then press into cracker crumbs.
5. Spray 9x13 pan with cooking spray. And lay chicken into pan.
6. Sprinkle with parsley.
7. Cover with tin foil and bake 35 mins @ 400. Remove foil and bake additional 10 mins until golden brown.
