By Addie
Poke around your cupboard and freezer and you'll probably find everything you need to make a classic "poke" cake. Some things just get easier. Strawberry may be uses as well as the raspberry.

I baked this cake last night, then added the whipped cream this morning. I also used strawberries instead of the raspberries. I love it! Not only is it extremely easy to make, it's delicious! The cake is very moist, but not soggy! I may try using the vanilla pudding next time, though, like many reviewers have suggested..just for something different. My husband's gonna love it!!!!!
I made this cake using a Betty Crocker vanilla cake mix and rasberry jello but for the frosting I used 1 tub of extra creamy cool whip and 1 pkg of vanilla instant pudding add a little bit of milk (to mix the pudding)in a bowl then add the add the cool whip mix well delish :)
Cake mixes of today are very different from the ones 20 - 30 years ago. Betty Crocker and Pillsbury cake mixes come with "pudding in the mix". Duncan Hines does not. Adding a four serving package of instant pudding to the first two mixes are not necessary. It probably would be OK for the Duncan Hines, and might actually help to make the poke cake less soggy. Poke cakes really are desserts that bring me back to my youth. Even if yours turns out a little soggy, serve it in a bowl. It will still taste wonderful. My only other tip is not to put the Kool Whip on until the very last minute. It is such a fun cake.
I have made this poke cake recipe for 40 years and I can't believe people are missing the important ingredient, 1 package vanilla instant pudding, (dry mix mixed in with the cake mix). Omitting this pudding is the reason their cake is soggy. You must add this to get the right texture to the cake. I would like to give my ingredients as I got them years ago from the "Jello" company. 1 pkg yellow cake mix 1 pkg vanilla INSTANT pudding (dry) 1 cup water 1/4 cup oil 4 eggs Combine and mix 4 minutes/Grease & flour pan/Bake 350 for 35 minutes cool for 15 minutes 1 3 oz box raspberry jello/ or any flavor 1 cup boiling water, l cup cold water Poke holes in cake and pour jello over/ REFRIGERATE YOu MUST add the instant pudding
This is a super easy, family favorite. I love to make things from scratch, but this is too easy, too fun, and kids like to help. You can sub any jello, even pudding. I use more jello though, and as long as it's in the fridge long, it stil sets. I always make fresh whipping cream, then fold in the matching flavor yogurt. Last time we used strawberry banana jello, yellow cake mix, and a small single serving yogurt in strawberry banana flavor in the whip cream. Then when I serve, I cut up some banana and strawberry for the top. YUM. And for the person it rated it 1 for it falling apart, this isn't a layer cake as you now know:-)Maybe bake cakes, remove from pans, put in a pan with a removable bottom, pour jello, use less jello, then let set and remove the pan?
If you make this cake, do not try and remove it from the pan... I made it for Easter and wanted to make a double layer round cake, and the whole cake fell apart all over the counter. My guests will now be eating cake out of a bowl like ice cream.... Not happy with this recipe at all!!!
This is one of my family's favorite recipes. To change it up a bit, simply pour the jell-o on the cake when it is warm, it penetrates the entire cake. YUM!
Loved it!! I made 24 cupcakes with raspberry jello and they were SO good!! Best cake I have ever made!! YUM! Do they make lemon jello? I love lemon cake!
Loved this cake but my kids thought it was too squishy...Maybe that's because all my other cakes were dry???? It's worth trying again though. More for Mom!
This is one of our favorites, my daughter asks for it every year for her birthday. One thing we do is make sure the cake is completely cooled before putting the Jello on. We then let the Jello set up in the refrigerator for about 20-30 minutes (just until a little thickened) before pouring over the top of the cake. It keeps the cake from getting mushy that way.
I made this for Easter Sunday and it was a great hit! It is so pretty too. Will definitely make again! I used strawberry jello and garnished with cool whip and strawberries.
This is one very good cake. Even my partner loved it and he's normally not one for sweets. I couldn't believe it when he said he wanted another piece. One piece of advice for people who said it was too much water. Use a Betty Crocker cake mix. I've learned the hard way in the past that there is a difference in quality between the name brands the generic stuff.
My daughter says it is the best cake ever. We made it for friends & everyone loved it. It was easy & looked special. I made the lemon frosting described on another recipe; again everyone loved it. There were a couple of people who thought the lemon frosting was a little too sweet though.
I have made this cake also for several years but I modified the topping. Instead of just cool whip I do 1 box of French Vanilla pudding with one cup of milk. So it is the cool whip plus the pudding and then I tint it with whatever color jello I use in the cake. Very yummy.
