Ingredients

  • 4 lbs Pork side ribs, trimmed of fat and cut into 3-bone portions
  • 2 cans of beer
  • 1/4 cup butter or margarine
  • 2 garlic cloves, minced (or 1/2 tsp. garlic powder)
  • 7 1/2 oz can of tomato sauce
  • 1/4 cup brown sugar, packed
  • 3 tbsp. Louisiana hot sauce
  • 1 tbsp. cider vinegar
  • 2 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Step 1

Place ribs in Dutch oven or large pot. Pour beer over top. Add water to cover. Bring to a boil. Reduce heat to medium-low. Simmer, coverec, for about 1 hour until ribs are tender. Drain.

Melt butter in medium saucepan on medium. Add garlic. Gook for about 5 minutes, stirring often, until fragrant.

Add remaining 7 ingredients. Bring to a boil. Reduce heat to low. Simmer for 10 minutes to blend flavours. Let stand for about 10 minutes until slightly cooled. Preheat barbecue to medium. Place ribs on greased grill. Close lid. Cook for about 15 minutes, turning twice and brushing with tomatoe mixture until ribs are glazed and heated through. Makesten 3-bone portions.
