Ingredients

  • 1 1/2 lb. ground meat (beef, pork, veal or turkey)
  • 2 T. olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, chopped
  • 1 14.5 oz can Italian crushed tomatoes
  • 2 handful basil leaves, shredded or torn
  • 2 T. butter
  • 2 T. flour
  • 1 c. milk
  • nutmeg
  • 1/2 c. ricotta cheese
  • 1/4 c. parmigiano-reggiano cheese
  • 4 hamburger or ciabatta rolls

Preparation

Step 1

Season the meat with plenty of salt and pepper. Form into 4 patties, thinner in teh middle for more even cooking. Drizzle with olive oil

In a saucepan, heat 2 T. olive oil over medium heat. Add the onion and cook until softened. Add the garlic, cooking 2 minutes more. Stir in the tomoatoes adn season with salt and pepper. Stir in basil.

Cook patties.

In small saucepan, melt butter over medium heat. Add flour, cooking for 1 minute, then whisk in milk. Season with salt, pepper, and nutmeg, cooking until thick (about 5 minutes). Stir in ricotta and parmigiano-reggiano cheeses.

Spoon red sauce on the roll bottoms, add patties. Dollop cheese sauce on the patties. Setting top roll in place.
