Ingredients
- 4 skinless boneless chicken breast halves (about 1 lb)
- 2 Tbsp. flour
- 1 Tbsp. butter
- 1 cup tomato juice
- 1/4 cup Picante Sauce
- 1 small onion, chopped (about 1/4 cup)
- 2 cloves garlic, minced
- 4 fresh basil leaves, coarsely chopped
- crushed red pepper flakes, to taste
- 4 cups hot cooked rice

Preparation
Step 1
Coat chicken with flour. Heat butter in a 10" skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides. Add onion and garlic to the skillet and cook and stir for 2 minutes.
Stir the tomato juice, picante sauce, basil and red pepper flakes into the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the chicken is cooked through.
