Ingredients

  • Cookies:
  • 1 pouch (1 lb 1.5 oz) Betty Crocker Double Chocolate Chunk cookie mix
  • 1/4 cup vegetable oil
  • 2 tablespoons water
  • 1 egg
  • 2/3 cup chopped pecans
  • 12 large marshmallows, cut in half
  • .....................
  • Frosting:
  • 1 cup semisweet chocolate chips (6 oz)
  • 1/3 cup whipping cream
  • 1 teaspoon butter or margarine
  • 1 teaspoon vanilla
  • 1/2 cup powdered sugar

Preparation

Step 1

Heat oven to 350°F. In large bowl, stir cookie mix, oil, water, egg and pecans until soft dough forms.

On ungreased cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.

Bake 7 minutes. Remove from oven; immediately press marshmallow half lightly, cut side down, on top of cookie. Bake 1 to 2 minutes longer or just until marshmallows begin to soften. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.

Meanwhile, in 1-quart nonstick saucepan, melt chocolate chips over low heat, stirring until smooth. Remove from heat. Add whipping cream, butter and vanilla; blend well. Stir in powdered sugar until smooth.

Spread frosting over each cooled cookie, covering marshmallow. Let stand until frosting is set. Makes 2 dozen cookies

TIPS:

A pouch of Betty Crocker® chocolate chip cookie mix can be used for the double chocolate chunk cookie mix.

Lightly spray kitchen scissors with cooking spray to make cutting marshmallows easy.

I've been a cookie person since I was very young. These cookies are the best I can remember. Everyone that had some have asked for more. Very easy to bake, but look and taste like I spent a lot of time with them. The also freeze well. This recipe is definitely a saver.

I added this recipe to the annual cookie plate and was pleasantly surprised to find out that one of the recipients of the plate said that he wasn't a big cookie fan until this cookie! A fancy sprinkle on top was the finishing touch. It reminded me of a marshmallow brownie recipe from years ago, but 10 x's better! Thanks for sharing this wonderful recipe! Definitely a keeker!

These cookies are very sweet and I like sweet. A bit too much though. A few some problems with the baking. The cookies are extremely soft even though I added 1 minute more to the baking time. I was afraid to over bake them. Left them on the baking pan to cool, otherwise they will ooze thru the cooling rack.The icing is VERY sweet.After all the cooling, they still are a very soft cookie.Too many great recipes to try...won't bake this one again.

These are so wonderful! They remind me of Devil's Food packaged cookies I had as a child but these are so much better. I was making them to take to work so tried to layer them in a container which I shouldn't have done (not as pretty). The frosting thickens as it cools a bit so maybe next time I'll wait a bit to frost them. My co-workers loved them and asked for the recipe, always a good sign. Easy and delicious!

These were so AWESOME. No wonder they won a contest. I feel like I could win a contest with these. I still can believe you use a mix. I have always been a 'from scratch' cookie baker, but not when it comes to these. I wouldn't change one thing on the recipe, it's perfect and sooo easy. The icing is super delicious, and one batch of icing is enough for two batches of cookies, just FYI.

These were excellent cookies!The only thing I suggest is that the frosting seems to have a little too much vanilla - but other wise it was delish!!!!!!!!!!!

These cookies were so delicious and easy to make! I just used regular chocolate chip cookie mix and they were so yummy. I bet the BC walnut chocolate chip cookie mix would be good too. The added touch of the pecans was awesome. Everyone raved about these cookies at our Chirstmas party!
