Grilled Brats in Beer

Ingredients
- 2 large sweet onions, sliced into 1/2 inch thick rounds
- 2 tbsp vegetable oil, plus more for cooking grate
- ground pepper
- 1 bottle low flavour lager beer (Coors or Budweise Light)
- 3 tbsp Dijon mustard
- 1/2 tsp sugar
- 1/2 tsp caraway seeds
- 1 disposable 13 by 9 inch aluminium pan
- 5 bratwurst sausages
- 5 sausage buns

Preparation
Step 1
Turn all burners on gas barbecue to medium high and preheat grill with lid down until very hot, about 10 to 15 minutes. Scrape grate clean with grill brush; dip a wad of paper towels in vegetable oil and holding wad with long tontgs, wipe cooking grate.
Brush onions with vegetable oil and season with pepper. Whisk beer, mustard, sugar, caraway and 1/2 tsp ground pepper in aluminum pan.
Place pan on one side of grill and grill onions on the other side until lightly charred, 6 to 10 minutes. Transfer onions to pan and grill sausages until browned, 6 to 10 minutes, turning occasionally. Transfer sausages to pan with the onions, close lid on grill and simmer until sausages are cooked through.
Remove sausages from pan and grill until lightly charred, about 4 minutes. Transfer sausages to a plate and tent with foil. Continue to simmer beer mixture, with grill covered, until onions are tender and sauce is slightly thickened, about 5 minutes. Place brats in sausage buns; spoon on sauce and onions.
