Ingredients

  • 1 x 3 lb chicken, cut into serving pieces
  • 1/2 cup dry sherry
  • 1/2 cup dry white wine
  • 1 cup chicken broth
  • 1 cup chicken broth
  • 2 cloves garlic, crushed
  • 1 tsp Italian herb mix
  • 1/2 cup peanut oil
  • 1 tsp soya sauce

Preparation

Step 1

Place the chicken pieces into a glass bowl and sprinkle with all other ingredients. Marinate in a cooler for 2 hours. Place on the barbecue on medium high cooking slowly for 30 to 40 minutes. Baste continually.
