Ingredients
- 2 cups flour
- 2 t soda
- 1 t salt
- 2 cups sugar
- 2 t cinnamon
- 1 1/2 cups oil
- 4 beaten eggs
- 3 cups finely grated carrots
- Icing
- 1 package confectioners' sugar
- 1 8 oz package reduced fat cream cheese
- 1 cup pecans, chopped
- 1/2 cup butter
- 1 - 3 1/2 oz unsweet coconut flakes
- 2 t vanilla

Preparation
Step 1
Sift together dry ingredients and add oil, eggs, and carrots. Mix well. Bake in three 8" layers at 350* for 25 - 30 minutes. Make sure pans are greased and floured.
Can be baked in 13"x9" pan at 350* about 40 minutes or til firm in center. This will make 60 cupcakes. Bake at 350* about 20 minutes.
Icing
Cream softened butter and sugar. Add softened cream cheese. Beat til smooth. Add vanilla, nuts and coconut.
