Crispy-Coat Chicken

Ingredients
- 1 (7 ounce) bag herb-style or corn bread stuffing, finely crushed (one 7-ounce bag equals 4 cups stuffing or 2 cups crushed stuffing)
- 1 (0.7 ounce) package Italian salad dressing mix
- 2 eggs, well beaten
- 1 chicken (about 3 pounds), cut into 8 pieces

Preparation
Step 1
Preheat oven to 350 degrees. Coat 9x13-inch baking pan with cooking spray
In a shallow dish, combine stuffing crumbs and Italian dressing mix; set aside.
Place eggs in large bowl; add chicken and coat well. Roll chicken in crumb mixture, one piece at a time, and coat thoroughly.
Place chicken in prepared baking pan and bake 1 hour, or until chicken is fork-tender and no pink remains.
Notes:
For flavor variations, add these ingredients to the stuffing crumbs:
Oriental: 1 tablespoon brown sugar, 1/2 teaspoon ground ginger, and 1 tablespoon sesame seed.
Cajun: 2 teaspoons paprika, 1/2 teaspoon thyme leaves, and 1 teaspoon cayenne pepper; Parmesan: 1/2 cup grated Parmesan cheese.
