Ingredients

  • 1 cup cold, cooked white rice (day old)
  • 2 cups cooked diced chicken or pork or ham or shrimp
  • 2 T peanut oil
  • Dash of garlic powder
  • 2-3 eggs, lightly beaten
  • Soy sauce
  • Garlic powder to taste
  • 1/2 cup drained canned bean sprouts (optional)
  • Canned, drained sliced mushrooms (optional)
  • Green onions, sliced, to taste (optional)
  • 1/2 cup frozen peas, thawed
  • 1/4 cup chopped green onion

Preparation

Step 1

Saute onions till transparent. Set aside. Fry rice in hot oil over medium heat, stirring constantly. Add egg stirring constantly until eggs are set. Add some soy sauce. Fry about 5 minutes, stirring constantly.

Add bean sprouts, mushrooms, and cooked onions. Fry a few more minutes till everything is hot. Add peas. Keep adding soy sauce until it's just right to your taste. Sprinkle green onions over the top and serve.

I like to use a low-salt soy sauce; otherwise it tends to be a bit salty and we wonder why we are so thirsty all evening, LOL!
