Ingredients

  • 1 alder grilling plank
  • 2 cups apple juice
  • 1/2 cup sliced green onion
  • 1/4 cup mirin (a low-alcohol, sweet, golden colored wine)
  • 1/4 cup soy sauce
  • 2 Tbsp. minced fresh ginger
  • 2 Tbsp. chopped fresh cilantro
  • 1 Tbsp. brown sugar
  • 1 (2 lb) skinless salmon fillet
  • 1 lime, thinly sliced

Step 1

Soak plank in apple juice fro 2-4 hours.

Meanwhile, in a large zip-lock combine green onion and next 5 ingredients. Add salmon fillet. Seal bag, turning to coat salmon and chill for 2 hours.

Remove plank from apple juice, discarding juice. Place a disposable aluminum pan under grill rack on one side of grill. Preheat other side to medium-high heat (350-400 degrees). Leave drip-pan side unlit. Remove fish from marinade, discarding marinade. Place fish on prepared plank,. arrange lime slices on top of fish.

Place plank on rack on unlit side of grill, and grill, covered, for 12-15 minutes or until fish flakes easily with a fork.
