Ingredients
- 1 (8 ounce) can crushed pineapple in its own juice
- 1/2 cup dried cranberries
- 3 tbsp white wine vinegar
- 1/3 cup mayonnaise
- 2 tsp Splenda or 2 packets powdered Stevia
- 1/2 head cabbage, shredded (about 4 cups)
- 1 apple, peeled, cored and shredded (about 1 cup)

Preparation
Step 1
Drain the juice from the pineapple into a blender or food processor. Reserve the pineapple separately. To the juice, add cranberries, vinegar, mayonnaise, and Splenda (or Stevia). Process the mixture for about 30 seconds, to break up the cranberries, then pour all into a large bowl. Add the reserved pineapple to the bowl.
Shred cabbage and apple, then remove to the large bowl. With a large spoon, mix all together and refrigerate until ready to serve.
