Almond Holiday Cookies

Ingredients
- Filling:
- 1 cup margarine
- 2/3 cup sugar
- 1 egg
- 2 1/2 cup flour
- 1/2 tsp. salt
- 1/2 tsp. almond extract
- 1 egg, slightly beaten
- ground nuts and cherries
- 2 Tbsp. margarine
- 1/4 cup shortening
- 1 egg white
- 1/2 tsp. almond extract
- 2 cups confectioners sugar

Preparation
Step 1
Cream together butter and sugar.
Beat in egg.
Stir in flour, salt and almond extract.
Chill dough.
Shape dough into small balls.
Dip each ball into egg white and roll in nuts.
Place on greased cookie sheet and press center down with finger to make a well.
Bake at 350 degrees for 5 minutes.
Again press center down and bake 3 to 5 minutes longer or until lightly browned.
Cool on wire rack.
Filling:
Heat butter over medium heat until brown in color.
Cool.
In small mixing bowl add shortening, extract, and confectioners sugar and beat until fluffy.
Add browned butter and continue beating.
If filling needs to be thinned add a few drops of water.
Fill wells of cookies with filling and decorate with cherries.
Yield: 6 dozen
