Ingredients

  • Ready made chicken
  • 1 pkg Sml tortilla shells
  • 1 pkg Lrg tortilla shells
  • A few sprigs Cilantro
  • 1 Zucchini
  • 1 1/2 lbs Ground meat (Turkey, Beef)
  • 2-3 Garlic (as desired)
  • 1 Onion
  • 1 tablespoon chili powder
  • 2 tsp cumin
  • A pinch of cinnamon
  • Salt and pepper to taste
  • ½ tsp oregano
  • Dry jalapeño (as desired)
  • Chipotle sauce (as desired)
  • 1 can black beans
  • Lettuce
  • Grated cheese blend (as desired)
  • Sour cream

Preparation

Step 1

LRG TORTILLA:
1. In a pot with some evoo - add your ground meat and brown.
3. To this add 4 oz of green chili’s and 1/2 tsp oregano, 1 tsp cumin and cilantro
4. Once this comes together for a few minutes - add some grated zucchini and garlic. Add the jalapeno and chipolata sauce as desired.
5. Add salt and pepper to taste.

SML TORTILLA:
1. In a sauce pot with some evoo - drops some chopped onions and grate some garlic into the onions.
2. Once the onions are translucent add chili powder 1 tablespoon, cumin 1 tsp, a pinch of cinnamon and salt and pepper to taste.
3. To this add the shredded chicken and heat through. Mix to combine and set aside.

Assembly:
1. You can semi fry the sml tortilla's by dipping them in warm oil in a deep skillet; this will soften them a little - or you can skip this part and just microwave for 1 minute.
2. Add 2 forkfuls’ of chicken stuffing in to the tortilla and place in a baking sheet that's been lightly buttered seem side down.
4. Top with cheese and bake at 350 for 10 mins.
5. For the lrg tortillas: wrap them in a damp kitchen towel and microwave for 1 min.
6. Take the can of black beans and put them into a pot to heat through - add a bit of evoo to this and mash them up as they are heating. Add salt and pepper to taste.
7. Stuff the burrito’s with the beans, lettuce, cheese, meat, sour cream and salsa.
